Menu Plan Monday

Easy week - going with old favorites for the most part:

Monday - "fake" jambalya
Tuesday - roast, fresh bread
Wednesday - ham & beans, cornbread
Thursday - leftovers
Friday - homemade pizza
Saturday - burritos, spanish rice
Sunday - breakfast (eggs, sausage, toast)

Last week we made a deep dish pizza in addition to our normal pizza and it was FABULOUS!!! Every bit as good as a pizza parlour pizza - we've been talking about it ever since, so that is definitely back on the menu for this week.

Pizza - we cheated and used Trader Joe's pizza dough, but you could also use any pizza dough recipe. Then I put it in my pampered chef Deep Dish baker (but any brand would do). We put tomato sauce on it - jazzed up with some Penzey's pizza seasoning and crushed garlic. Then added mozzarella, turkey pepperoni, sun dried tomatoes from our garden, crumbled sausage, banana peppers from our garden that had been sliced and stored in the fridge in water and vinegar, chopped red and green peppers and topped it off with some freshly grated parmesan cheese. I baked it at 400 until it was done - twenty minutes or so. Really nothing unique, but the combination of ingredients and cooking it in the deeper cooking stone really made a difference!

Sun dried tomatoes from the garden...ooh that sounds so good. I never thought of doing that! Is there a trick to the process. I may have to try that this summer! Sometimes I get more tomatoes than I know what to do with!
